I made marshmallows last week and gave some to a friend. She advised me not to share my recipe since they were perfect and I should start a marshmallow business…I don’t know about a business making marshmallows all day. That would be a sticky business indeed.
Can’t remember where I found the recipe but here it is. The brand of vanilla really effects the taste of the marshmallows. I prefer Penzeys single strength vanilla.
Homemade Marshmallows ~ makes 12 huge ones
2 envelopes of unflavored gelatin
1/3 cup cold water
1 1/3 cup granulated sugar
scant 1/2 cup corn syrup
1/6 cup water
1/6 teaspoon salt
2 teaspoons or more of Penzeys single strength vanilla
confectioners’ sugar
In the bowl of an electric mixer, sprinkle gelatin over 1/3 cup cold water. Let it stand and soak for 10 minutes.
Combine sugar, corn syrup, and 1/6 cup water in a small saucepan. Bring to a boil and boil for 1 minute.
Pour boiling syrup into gelatin and mix at high speed. Add the salt and beat for about 12 minutes. Add vanilla. Scrape into a 9×9 inch greased pan. Cover with powdered sugar.
Let the marshmallows sit for 4-5 hours or refrigerate for 1-2 hours.
Remove from pan, dredge the marshmallow slab with confectioners’ sugar and cut into 12 equal pieces. Dredge each piece of marshmallow in confectioners’ sugar.
