Chocolate Mint Sandwich Cookies

Chocolate Mint Sandwich Cookies

6 tablespoons butter
1-1/2 cups packed brown sugar
2 tablespoons water
2 cups semisweet chocolate chips
2 eggs
1 teaspoon vanilla extract
2-1/2 cups flour
1-1/2 teaspoons baking soda
1 teaspoon salt

Frosting:
2-1/2 cups powdered sugar
1/4 cup butter
3 tablespoons milk
1/2 teaspoon peppermint extract
3 drops green food coloring, opt
dash of salt

In a saucepan, combine the butter, brown sugar, water, and chocolate chips. Cook and stir over low heat until chips are melted. Cool. Beat in eggs and vanilla. Combine the flour, baking soda, and salt; gradually add to the chocolate mixture. Drop by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheets. Bake at 350 degrees F for 10-12 minutes or until firm. Cool slightly on pans and remove to cool completely.

In a large mixing bowl, combine frosting ingredients until smooth. Spread on bottom of half of the cookies and top with remaining cookies.

about 15 sandwiches

I found this in the Taste of Home cookbook. The cookies surprised me by spreading a lot while baking.
