Cranberry Orange Bread

A college roommate shared this very good Cranberry Orange Bread recipe with me a few years ago. I make it all the time and it’s so good that I’ll post it here to share.

Cranberry Orange Bread

2 c flour
3/4 c white sugar
1-1/2 tsp baking powder
1/2 tsp baking soda
dash of salt
1/4 c butter
1 tbsp grated orange zest
3/4 c orange juice
1 egg
1 c dried sweetened cranberries
1/2 c chopped nuts (optional)

Heat of oven to 350 degrees F and grease or line loaf pan with wax paper. Mix flour, sugar, baking powder, baking soda, and salt together. Cut in butter, then mix in the orange zest and juice. Finally mix in the egg. When well mixed, add dried cranberries (and nuts if you desire). Bake for 55-65 minutes.

Notes: This recipe is for a 9″x5″x3″ loaf pan. You can use fresh cranberries instead of dried, but the cranberries will be very tart in comparison to the slightly sweet bread. I like the contrast, but it’s not for everyone.
